Vegetables need oil and space in the air fryer. Get those two right and almost everything else follows.

Oil is not optional here
Unlike frozen food, fresh vegetables carry no fat at all. Dry vegetables scorch at the edges before the middle softens. A light toss in oil conducts heat evenly across the surface and is what produces browning rather than burning.
Match the cut to the vegetable
Dense vegetables — carrots, potatoes, cauliflower stems — need smaller pieces or longer times. Watery ones — zucchini, peppers, mushrooms — need higher heat and more space so the moisture they release can escape rather than pool.
Do not mix cooking times in one basket
Carrots take roughly twice as long as peppers. Cooking them together means one is raw or the other is charred. Either cook separately, or cut the slower vegetable much smaller to even things out.

Most vegetables cooks between 375°F and 400°F. The table above gives the exact setting for each one rather than a single average.
Can you cook vegetables from frozen in an air fryer?
Several of these can be cooked straight from frozen — the individual pages give the adjusted time. As a rule, add 30–50% to the time and drop the temperature slightly so the outside does not overcook first.
