Never thaw first
This is the most common mistake. Thawed frozen food releases water, and water is the enemy of a crisp coating — it steams the surface instead of letting it brown. Everything on this page goes in frozen solid.
You almost never need oil
Most frozen convenience food is par-fried before freezing and already carries enough oil to crisp up. Fries, nuggets, tots and onion rings need nothing added. The exceptions are drier wrappers — spring rolls and egg rolls — which benefit from a light mist.
One layer, always
An air fryer cooks by moving air. A stacked basket blocks that airflow, and the pieces in the middle steam in the moisture the outer ones give off. Two batches in a single layer beat one crowded batch every time.
